The bearded gentleman with the crosier (fancy walking stick for religious big wigs) and the book (representing Benedict's Rule) is St. Benedict of Nursia (Sveti Benedikt iz Nursije). The armored knight spearing a dragon is, indeed, St. George (Sveti Juraj, Michael typically features wings and a sword, even when using a spear). And finally, the lady at the end with the chalice cup and rose crown (symbolizing martyrdom) is St. Barbara (Sveta Barbara). All three are venerated in Roman Catholicism.
